Pancakes with Cottage Cheese and Vanilla Filling

Ingredients for pancakes:
- Milk – 500 ml
- Eggs – 3 pcs.
- Flour – 220 g
- Sugar – 2 tbsp
- Salt – a pinch
- Vegetable oil – 2 tbsp
For the filling:
- Cottage cheese – 300 g
- Sugar – 2-3 tbsp (to taste)
- Vanilla sugar – 1 packet
- Sour cream – 2 tbsp
Step-by-step preparation:
- Whisk together the eggs, sugar, and salt. Pour in half the milk, add the flour, and stir until smooth. Then add the remaining milk and vegetable oil.
- Heat a frying pan, lightly grease it, and bake thin pancakes over medium heat.
- Mash the cottage cheese with sour cream, sugar, and vanilla until soft and creamy.
- Place 1-2 tablespoons of the cottage cheese mixture on the edge of each pancake and roll it up. You can lightly fry the finished pancakes in butter – this will make them golden brown and warm.
Pancakes with Chicken and Mushrooms

Ingredients for the filling:
- Chicken fillet – 350 g
- Mushrooms – 250 g
- Onion – 1 pc.
- Butter – 30 g
- Salt and pepper – to taste
- Sour cream or cream – 2 tbsp.
Step-by-step preparation:
- Place the fillet in salted water and simmer for 20–25 minutes. Then cool and chop finely.
- Dice the mushrooms and onion and fry in butter until golden brown.
- Combine the mushrooms, onion, and chicken. Add sour cream, salt, and pepper. Stir.
- Place the filling on each pancake and roll it into a roll or “cigarette.” Reheat in the oven before serving or lightly toast. Serve with sour cream and garlic sauce.
Apple and Cinnamon Pancakes

Ingredients for the filling:
- Apples – 3-4
- Sugar – 3 tbsp
- Cinnamon – 1 tsp
- Butter – 20 g
- Lemon juice – 1 tbsp
Step-by-step preparation:
- Peel the apples and cut into small cubes.
- Melt the butter in a frying pan, add the apples, sugar, lemon juice, and cinnamon. Simmer for 8-10 minutes until soft.
- Spread the warm apple filling over the pancakes and roll them up.
- Serve hot, dusted with powdered sugar or drizzled with caramel sauce.
