Step-by-step preparation:

  • Dice the carrots, potatoes, and onions.
  • Heat the olive oil in a saucepan and lightly sauté the onions until translucent.
  • Add the carrots and potatoes and sauté for 3-5 minutes.
  • Pour water (about 500 ml) over the vegetables, bring to a boil, and cook over medium heat for 15-20 minutes until soft.
  • Use a blender to puree the vegetables.
  • Add the cream, season with salt and pepper, and bring to a gentle simmer.
  • Serve garnished with herbs.
