Cream of Carrot Soup

Ingredients:
- Carrots – 500 g
- Potatoes – 1–2
- Onion – 1
- Creamy Cream – 100 ml
- Olive Oil – 2 tbsp.
- Salt and pepper to taste
- Serving herbs
Step-by-step preparation:
- Dice the carrots, potatoes, and onions.
- Heat the olive oil in a saucepan and lightly sauté the onions until translucent.
- Add the carrots and potatoes and sauté for 3-5 minutes.
- Pour water (about 500 ml) over the vegetables, bring to a boil, and cook over medium heat for 15-20 minutes until soft.
- Use a blender to puree the vegetables.
- Add the cream, season with salt and pepper, and bring to a gentle simmer.
- Serve garnished with herbs.
Carrot Cutlets

Ingredients:
- Carrots – 400 g
- Egg – 1
- Flour – 3-4 tbsp.
- Salt and pepper – to taste
- Breadcrumbs – for dusting
- Vegetable oil – for frying
Step-by-step preparation:
- Grate the carrots on a coarse grater.
- Mix the carrots with the egg, add salt, pepper, and flour.
- Form small patties and roll them in the breadcrumbs.
- Heat a frying pan with vegetable oil.
- Fry the patties for 3-4 minutes on each side until golden brown.
- Serve with sauce, sour cream, or fresh vegetables.
Carrot Cake

Ingredients:
- Carrots – 300 g
- Flour – 200 g
- Sugar – 150 g
- Eggs – 3
- Baking powder – 1 tsp
- Cinnamon – 1 tsp
- Nuts (optional) – 50 g
- Butter – 50 g
Step-by-step preparation:
- Finely grate the carrots.
- In a bowl, beat the eggs and sugar until fluffy.
- Add the melted butter and mix.
- Add the flour, baking powder, and cinnamon and mix gently.
- Add the carrots and nuts, mixing thoroughly.
- Pour the batter into a greased pan and smooth it out.
- Bake at 180°C for 35-40 minutes until golden brown.
- Let the pie cool and serve with tea or coffee.
