Zucchini pancakes with herbs

Ingredients:
- Zucchini – 1 medium-sized pc.
- Egg – 1 pc.
- Flour – 2-3 tbsp.
- Salt — to taste
- Black pepper — to taste
- Greens (dill, parsley) — to taste
- Sunflower oil — for frying
Preparation:
- Grate the zucchini on a coarse grater, lightly squeeze out the juice. Add the egg, flour, salt, pepper and finely chopped greens. Mix until smooth.
- Heat the frying pan, add a little oil. Spoon the pancakes and fry on both sides until golden brown.
- Serve with sour cream or yogurt sauce.
Omelette with zucchini and cheese

Ingredients:
- Zucchini — 1/2 medium
- Eggs — 2 pcs.
- Hard cheese — 30-50 g
- Salt, pepper — to taste
- Oil — for frying
Preparation:
- Cut the zucchini into small cubes or half rings.
- Fry the zucchini in a frying pan for 3-4 minutes until soft.
- Beat the eggs with salt and pepper in a bowl.
- Pour the egg mixture over the zucchini.
- Sprinkle with grated cheese on top.
- Cook under the lid over medium heat until the omelette is ready.
Toasts with zucchini spread

Ingredients:
- Zucchini – 1 small
- Garlic – 1 clove
- Olive oil – 1-2 tbsp.
- Lemon juice – 1 tsp.
- Salt, pepper – to taste
- Toast bread or baguette
Preparation:
- Peel the zucchini (if the skin is tough), cut and fry in a frying pan until soft.
- Add chopped garlic, salt, pepper, lemon juice and a little olive oil.
- Transfer everything to a blender and grind until puree.
- Toast the bread until crisp.
- Spread the zucchini paste on the toasts, garnish with herbs or seeds if desired.
