Pumpkin and Spinach Salad

Ingredients:
- 200 g baked pumpkin
- handful of fresh spinach
- 50 g soft cheese (feta or goat)
- 1 tbsp pumpkin seeds
- 1 tsp honey
- 1 tbsp olive oil
- a dash of lemon juice
Step-by-step preparation:
- Bake the pumpkin cubes in the oven until soft.
- Toss the spinach leaves with the cheese pieces and pumpkin.
- Sprinkle the salad with the seeds.
- For the dressing, combine honey, olive oil, and lemon juice and drizzle over the top.
Autumn Salad with Apples and Walnuts

Ingredients:
- 1 large apple
- 50 g walnuts
- 50 g cheddar or Parmesan cheese
- a few leaves of iceberg or romaine lettuce
- 1 tbsp yogurt
- 1 tsp Dijon mustard
- a dash of honey
Preparation:
- Slice the apples and lightly toast the nuts in a frying pan.
- Toss the apples with the lettuce leaves and cheese.
- Mix the yogurt, mustard, and honey for the dressing.
Pour over the salad and toss gently. Beetroot Salad with Orange and Nuts

Ingredients:
- 1 boiled beetroot
- 1 orange
- a handful of walnuts or hazelnuts
- a dash of olive oil
- balsamic vinegar to taste
Instructions:
- Dice the beetroot, peel the orange, and separate into wedges.
- Mix the ingredients and add the nuts.
- Dress with olive oil and balsamic vinegar.
