Classic Crème Brûlée

Crème Brûlée is a delicate vanilla custard with a crisp caramel crust. The perfect dessert for a romantic dinner or a cozy evening.
Ingredients:
- 4 egg yolks
- 500 ml cream (33%)
- 80 g sugar
- 1 tsp. Vanilla extract
- Sugar for the caramel crust
Instructions:
- Whisk the egg yolks with sugar until smooth.
- Heat the cream and vanilla, but do not bring to a boil.
- Pour the hot cream into the yolks in a thin stream, stirring constantly.
- Pour into molds and bake in a water bath for 40-45 minutes at 150°C.
- Cool, sprinkle with sugar, and caramelize with a blowtorch or under the grill.
Madeleines

These lemon-flavored mini cupcakes are loved the world over. The dough comes together in minutes, and the result is incredibly airy.
Ingredients:
- 2 eggs
- 100 g sugar
- 100 g flour
- 100 g butter
- 1 tsp baking powder
- Zest of half a lemon
Directions:
- Whisk the eggs with sugar.
- Add melted butter, zest, flour, and baking powder.
- Stir until smooth and chill for 30 minutes.
- Pour into molds and bake for 10-12 minutes at 190°C.
- Recipe tip: to achieve that “hump,” chill the dough.
French Chocolate Mousse

Just 4 ingredients – and maximum enjoyment. The mousse is airy, silky, and richly chocolatey.
Ingredients:
- 200 g dark chocolate
- 3 eggs
- 30 g sugar
- 1 pinch of salt
Instructions:
- Melt the chocolate in a double boiler.
- Separate the whites from the yolks.
- Fold the yolks into the warm chocolate.
- Whisk the whites with the sugar and salt until stiff peaks form.
- Gently fold the mixture into the chocolate.
- Pour into cups and refrigerate for 2-3 hours. When serving, garnish with berries, almonds, or a dollop of whipped cream.
