Warm Salad with Quinoa, Vegetables, and Feta

Ingredients:
- quinoa – 150 g
- water – 300 ml
- bell pepper – 1
- cherry tomatoes – 8-10
- Spinach – 1 handful
- Feta cheese – 100 g
- Olive oil – 2 tbsp
- Lemon juice – 1 tbsp
- Salt and pepper – to taste
Directions:
- Rinse the quinoa and boil it in salted water until tender (about 15 minutes).
- While the quinoa is cooking, chop the vegetables and fry the bell pepper in a pan for 3-4 minutes.
- Toss the quinoa with the vegetables, add the spinach and feta crumbs. Dress the salad with olive oil, lemon juice, and spices.
Quinoa with chicken and mushrooms

Ingredients:
- Quinoa – 200 g
- Chicken fillet – 300 g
- Mushrooms – 200 g
- Onion – 1 pc.
- Garlic – 2 cloves
- Cream (or coconut milk) – 100 ml
- Vegetable oil – 2 tbsp
- Salt, pepper, thyme – to taste
Directions:
- Boil the quinoa until tender.
- Fry the chopped fillets in a frying pan until golden brown.
- Add the onion, garlic, and mushrooms and fry until soft.
- Pour in the cream, season with spices, and simmer for 5 minutes.
- Toss the quinoa with the sauce and serve hot.
Healthy Chocolate Chip Quinoa Cookies

Ingredients:
- Cooked quinoa – 1 cup
- Oatmeal – 1 cup
- Banana – 1 tbsp
- Cocoa – 1-2 tbsp
- Honey or agave syrup – 1-2 tbsp
- Dark chocolate – 50 g (optional)
Directions:
- Mash the banana, then add honey, cocoa, and oats.
- Stir in the cooked quinoa and chocolate chips.
- Spoon the mixture onto parchment paper and bake for 15-20 minutes at 180°C.
