Ingredients:
- Young potatoes – 1 kg
- Garlic – 4-5 cloves
- Olive oil – 3-4 tbsp. spoons
- Salt — to taste
- Ground black pepper — to taste
- A mixture of dried herbs (Provencal, Italian or your favorite) — 1-2 teaspoons
- Fresh rosemary, thyme — optional
- Greens (parsley, dill) for serving — to taste
Step-by-step recipe:
- Wash the young potatoes thoroughly under running water with a brush to remove any remaining soil. If the tubers are large, cut them in half or quarters. Small potatoes can be left whole.
- In a bowl, mix olive oil, crushed garlic (you can press it or finely chop it), salt, pepper and dried herbs. Add some fresh rosemary or thyme if you want to enhance the flavor.
- Place the potatoes in a large bowl, pour in the aromatic oil with herbs and garlic. Mix well so that each potato is covered with the marinade.
- Preheat the oven to 200°C. Place the potatoes on a baking sheet lined with parchment paper in a single layer. Place in the oven and bake for 35-45 minutes, stirring occasionally until the potatoes are evenly browned.
- Sprinkle the finished potatoes with fresh herbs and serve hot. This dish goes well with meat, fish, salads, or can be a standalone snack.
