Ingredients:
- Beans – 200 g (white or red, to taste)
- Beef or pork – 400 g
- Potatoes – 3-4 pieces
- Carrots – 1 piece
- Onions – 1 piece
- Tomato paste – 1 tbsp. spoon (optional)
- Garlic – 2 cloves
- Bay leaf – 2 pieces
- Sunflower oil – for frying
- Salt, pepper – to taste
- Greens (dill, parsley) – for serving
- Water – 2.5-3 liters
Step-by-step recipe
- Rinse the beans and soak them in cold water for at least 6-8 hours, or better yet, overnight. This will reduce the cooking time and make the beans soft.
- Drain the water in which the beans were soaked, add fresh water and boil the beans until half cooked (about 30-40 minutes).
- Cut the meat into medium pieces, pour in water (2.5-3 liters) and put to boil. After boiling, remove the foam, reduce the heat and cook for about 40-50 minutes until the meat is soft.
- After the meat becomes soft, add the beans to the broth and continue cooking.
- Cut the potatoes into cubes. Grate the carrots on a coarse grater, chop the onion finely.
- Heat the sunflower oil in a frying pan. First fry the onion until translucent, then add the carrots. If desired, add tomato paste and simmer for 2-3 minutes.
- Place the potatoes in a saucepan, after 5 minutes add the fried onions and carrots. Cook until the potatoes are done (about 15-20 minutes).
- Add bay leaf, chopped garlic, salt and pepper to taste. Cook for another 5-7 minutes.
- Leave the soup to sit covered for 10-15 minutes before serving – the taste will become richer.
