Beetroot caviar is a delicious, healthy and easy-to-make snack that is perfect for both everyday meals and festive treats. Thanks to its bright color and rich taste, beetroot caviar can become a real highlight of any menu. We at joy-pup tell you how to make beetroot caviar.
Ingredients:
- Beets – 3 pcs. (medium size)
- Carrots – 1 pc.
- Onions – 1 pc.
- Tomato paste – 2 tbsp.
- Garlic – 2 cloves
- Vegetable oil – 3-4 tbsp.
- Salt, pepper — to taste
- Vinegar (apple or 9%) — 1 tbsp (optional)
- Greens (dill, parsley) — for serving

Step-by-step preparation:
- Peel and grate the beets and carrots on a coarse grater. Cut the onion into small cubes.
- Heat the vegetable oil in a deep frying pan or saucepan. Fry the onion until translucent, then add the carrots and simmer for 5-7 minutes.
- Add the grated beets to the fried vegetables. Mix well and simmer under a lid over medium heat for about 20 minutes, stirring occasionally. If the mixture is too thick, you can add a little water.
- Add tomato paste, chopped garlic, salt, pepper. Continue simmering for another 10 minutes.
- At the very end, you can pour in vinegar for a slight sourness. Remove from heat and let cool slightly.
Before serving, garnish the beetroot caviar with herbs. Serve as a separate appetizer, side dish or spread on bread.
