Ingredients:

  • Beets – 3 pcs. (medium size)
  • Carrots – 1 pc.
  • Onions – 1 pc.
  • Tomato paste – 2 tbsp.
  • Garlic – 2 cloves
  • Vegetable oil – 3-4 tbsp.
  • Salt, pepper — to taste
  • Vinegar (apple or 9%) — 1 tbsp (optional)
  • Greens (dill, parsley) — for serving

Step-by-step preparation:

  • Peel and grate the beets and carrots on a coarse grater. Cut the onion into small cubes.
  • Heat the vegetable oil in a deep frying pan or saucepan. Fry the onion until translucent, then add the carrots and simmer for 5-7 minutes.
  • Add the grated beets to the fried vegetables. Mix well and simmer under a lid over medium heat for about 20 minutes, stirring occasionally. If the mixture is too thick, you can add a little water.
  • Add tomato paste, chopped garlic, salt, pepper. Continue simmering for another 10 minutes.
  • At the very end, you can pour in vinegar for a slight sourness. Remove from heat and let cool slightly.

Before serving, garnish the beetroot caviar with herbs. Serve as a separate appetizer, side dish or spread on bread.
