Ingredients:

  • Chicken liver – 500 g
  • Onion – 1 pc.
  • Carrot – 1 pc.
  • Eggs – 2 pcs.
  • Milk – 150 ml
  • Semolina – 3 tbsp.
  • Sour cream – 2 tbsp. spoons
  • Salt, pepper – to taste
  • Vegetable oil – for frying
  • Nutmeg (optional) – 1/3 teaspoon

Step-by-step recipe:

  • Wash the chicken liver thoroughly, remove the films and veins. Peel the onion and cut into small cubes. Grate the carrots on a medium grater.
  • Heat the frying pan with a small amount of vegetable oil. Fry the onion until transparent, then add the carrots and cook for 2-3 minutes, stirring.
  • Pass the liver through a meat grinder or chop in a blender until smooth. Add the fried vegetables to the liver mixture. Beat in the eggs, pour in the milk, add semolina, sour cream, salt, pepper and nutmeg. Mix well. Leave the mixture for 10-15 minutes so that the semolina swells a little.
  • Preheat the oven to 180 ° C. Grease a baking dish with butter or cover with parchment. Pour the liver mixture into the dish and smooth it out.
  • Bake for 30-40 minutes until golden brown. You can check the readiness with a toothpick – if it comes out dry, the casserole is ready.
  • The liver casserole is delicious both hot and cold. You can serve it with fresh vegetables, sour cream or light garlic sauce.
