Crispy zucchini in batter is a simple, tasty and versatile snack that is suitable for both an everyday lunch and a festive table. Ingredients
- Zucchini – 2 medium (young)
- Eggs – 2 pcs.
- Milk – 3 tbsp. (optional)
- Flour – 5-6 tbsp. spoons
- Salt — ½ teaspoon
- Ground black pepper — to taste
- Dried or fresh garlic (optional) — 1 clove or ½ teaspoon
- Vegetable oil for frying
- Breadcrumbs — for a crispier crust (optional)
Step-by-step cooking recipe
- Wash young zucchini and cut into circles or slices. If the zucchini is ripe, remove the skin and seeds.
- In a deep bowl, beat the eggs with salt and pepper. Add milk (if using) and flour. The consistency of the batter should resemble thick sour cream. You can add a little garlic or your favorite spices: paprika, turmeric, Italian herbs. If you want a crispy crust, add a pinch of baking powder to the batter or replace some of the flour with corn flour.
- Dip each piece of zucchini in the batter. If you want to get an especially crispy crust, roll them in breadcrumbs.
- Heat vegetable oil in a frying pan. Fry the zucchini on both sides until golden and crispy – 2-3 minutes on each side over medium heat.
- Place the finished zucchini on paper towels to remove excess oil.
- Serve the zucchini with your favorite sauce, but they go best with yogurt or sour cream.
