Beets are a healthy and low-calorie vegetable that is great for light and tasty salads. They are not only healthy, but also suitable as dishes during diets. We at joy-pup offer a recipe for a light beetroot salad that won’t ruin your figure.
Ingredients:
- Beets (boiled or baked) – 2 pcs.
- Cucumber – 1 pc.
- Low-fat yogurt or Greek yogurt – 2 tbsp.
- Nuts (walnuts or almonds) – 1 tbsp. spoon
- Greens (dill, parsley) – to taste
- Lemon juice – 1 tsp
- Salt, black pepper – to taste

Preparation:
- Boil the beets until tender or bake in foil at 180°C for 40–50 minutes. After cooling, peel and grate on a coarse grater.
- Cut the cucumber into thin strips or cubes. Lightly chop the nuts with a knife or crush with a rolling pin.
- In a deep bowl, combine the beets, cucumber and greens. Add low-fat yogurt, lemon juice, salt and pepper. Mix well. Sprinkle the salad with nuts before serving.
