Pancakes have long won the love of gourmets around the world. These fluffy, tender pancakes are especially popular for breakfast. But if classic pancakes are a sweet dish with syrup or berries, then there are also original variations. We at joy-pup tell you how to cook pancakes with spinach. Ingredients
- Fresh spinach – 100 g
- Egg – 1 pc.
- Milk – 200 ml
- Flour – 150 g
- Baking powder – 1 tsp
- Salt – 1/3 tsp
- Olive oil – 1 tbsp. spoon (plus a little for frying)
- Cheese (optional) – 50 g (e.g. feta or parmesan)
Step-by-step preparation
- Wash the spinach and lightly sauté it in a frying pan with a drop of oil or water (1-2 minutes) until it reduces in volume a little. Let it cool.
- In a blender, mix the spinach, egg, milk and olive oil until smooth.
- In a separate bowl, mix the flour, baking powder and salt. Add grated cheese if desired.
- Gradually pour the spinach mixture into the dry ingredients, mixing well until you get a thick, lump-free dough.
- Heat a non-stick frying pan and grease it with a drop of oil. Spoon the dough, forming small round pancakes. Fry for 1-2 minutes on each side until golden brown.
- Serve pancakes hot. They go great with yogurt sauce, sour cream, cream cheese, avocado, or even a fried egg.
