Pumpkin soup is a delicate, aromatic and healthy dish that is ideal for the autumn and winter seasons. Adding nuts makes its taste richer and gives it a pleasant texture. We at joy-pup tell you how to make pumpkin soup with nuts so that it turns out truly delicious.
Ingredients:
- 500 g pumpkin
- 1 onion
- 1 carrot
- 2 cloves of garlic
- 500 ml vegetable or chicken broth
- 100 ml cream (10-20%)
- 50 g walnuts (or almonds, cashews)
- 2 tbsp olive oil
- 1 tsp butter
- Salt, pepper – to taste
- A pinch of nutmeg
- Greens for serving (parsley, cilantro)

Step-by-step preparation:
- Peel the pumpkin and cut into cubes. Cut the onion and carrot into small pieces, chop the garlic. You can lightly fry the nuts in a dry frying pan so that they reveal their aroma.
- Heat the olive oil and butter in a saucepan with a thick bottom. Fry the onion until soft, then add the carrots and garlic. Simmer for 3-4 minutes.
- Add the chopped pumpkin and pour in the broth. Bring to a boil, reduce the heat and cook for 20-25 minutes until the pumpkin is soft.
- Remove the soup from the heat and blend it with a blender until smooth. Add cream, salt, pepper and nutmeg, stir.
- Ladle the soup into bowls, sprinkle with chopped nuts and herbs. You can also add a drop of olive oil or sour cream.
