Ingredients

  • Green peas (fresh or frozen) – 300 g
  • Garlic – 1 clove
  • Lemon juice – 2-3 tbsp.
  • Olive oil – 3-4 tbsp.
  • Tahini paste (sesame paste) – 1-2 tbsp.
  • Fresh mint leaves – 10-15 leaves (to taste)
  • Salt – to taste
  • Ground black pepper – to taste
  • Ice water – 2-3 tbsp. (as needed)

Step-by-step recipe

  • If you are using frozen green peas, pour boiling water over them and leave for 2-3 minutes. Then drain the water and rinse with cold water or place in a bowl with ice – this will preserve the bright color.
  • Fresh peas can be lightly boiled for 3-5 minutes and also cooled.
  • Place the peas, garlic, lemon juice, tahini, olive oil, mint, salt and pepper in a blender bowl. Grind until smooth and creamy.
  • If the hummus is too thick, add a little ice water – this will give the texture a lighter, more delicate texture.
  • Taste the hummus and, if necessary, add more lemon juice, salt or mint if you want a more pronounced flavor.
  • Transfer the finished hummus to a deep plate or bowl, make a small depression in the center with a spoon and pour a little olive oil. You can garnish with mint leaves, peas or sesame seeds.
  • Serve with pita bread, crispy bread, croutons or vegetable wedges – carrots, cucumber, celery, bell peppers.
