Scrambled eggs in vegetable rings are a tasty and healthy dish that even children will love. It is prepared as quickly as possible, and is also very healthy and looks appetizing. We at joy-pup tell you how to properly cook scrambled eggs in vegetable rings for breakfast.
Ingredients
- Eggs – 2 pcs.
- Bell pepper (preferably red, yellow or orange for beauty) – 1 pc.
- Zucchini (optional) – 1 small.
- Tomato – 1 pc.
- Salt and pepper – to taste.
- Vegetable oil – 1-2 tbsp.
- Fresh herbs (dill, parsley or basil) – for decoration.
Step-by-step preparation:
- Wash the bell pepper and cut into rings about 1 cm thick. Remove the seeds and partitions.
- Peel the zucchini if it is tough and cut into rings 0.5–1 cm thick. Remove the seeds from the center to make a ring. Cut the tomato into rings of the same thickness, removing the core if necessary.
- Heat the frying pan over medium heat and add a little vegetable oil. Place the vegetable rings in the pan. Fry them on one side for 2–3 minutes until they become softer but do not fall apart.
- Flip the vegetable rings over to the other side. Carefully crack an egg into each ring. If the white starts to leak out, gently adjust it with a spoon. Salt and pepper to taste.
- Cover the pan with a lid and cook over low heat for 5–7 minutes until the white is completely set and the yolk remains slightly runny. If you prefer a fully cooked yolk, increase the cooking time.
