  • Vegetable oil – 1-2 tbsp.
  • Fresh herbs (dill, parsley or basil) – for decoration.

Step-by-step preparation:

  • Wash the bell pepper and cut into rings about 1 cm thick. Remove the seeds and partitions.
  • Peel the zucchini if ​​it is tough and cut into rings 0.5–1 cm thick. Remove the seeds from the center to make a ring. Cut the tomato into rings of the same thickness, removing the core if necessary.
  • Heat the frying pan over medium heat and add a little vegetable oil. Place the vegetable rings in the pan. Fry them on one side for 2–3 minutes until they become softer but do not fall apart.
  • Flip the vegetable rings over to the other side. Carefully crack an egg into each ring. If the white starts to leak out, gently adjust it with a spoon. Salt and pepper to taste.
  • Cover the pan with a lid and cook over low heat for 5–7 minutes until the white is completely set and the yolk remains slightly runny. If you prefer a fully cooked yolk, increase the cooking time.
