Summer is the time for light, refreshing and unusual dishes. One of the gastronomic favorites of the hot season is strawberry soup. This is not a regular soup in the classic sense, but a dessert dish that is served chilled. The delicate taste of strawberries, sweet and sour notes and coolness make it an ideal choice for a hot day. We at joy-pup offer a simple step-by-step recipe. Ingredients:
- Strawberries – 500 g
- Natural yogurt or kefir – 300 ml
- Sugar or honey – to taste (about 2-3 tablespoons)
- Lemon juice – 1 tbsp. spoon
- Mint — for decoration
- Vanilla or cinnamon — optional
- Ice — optional
Step-by-step preparation:
- Wash the strawberries, remove the stems. If the strawberries are large, cut them into 2-4 pieces.
- Put the strawberries in a blender, add yogurt (or kefir), sugar, lemon juice and, if desired, a little vanilla or a pinch of cinnamon.
- Chop everything until smooth. Taste and adjust the sweetness if necessary.
- Pour the soup into deep plates or bowls. Refrigerate for at least 30 minutes.
- Garnish with a mint leaf, add a couple of ice cubes, some whole berries or a thin slice of lime.
