Ingredients:
- Beets – 3 pcs. (medium size)
- Cottage cheese – 200 g
- Sour cream – 2 tbsp.
- Garlic – 1 clove
- Walnuts – 30 g (optional)
- Salt – to taste
- Ground black pepper – to taste
- Greens (dill, parsley) – for decoration
Cooking method:
- Wash the beets thoroughly and boil in boiling water until tender (about 40-50 minutes). You can bake in the oven at 180 ° C for about 60 minutes. Cool, peel and carefully cut off the top.
- Using a teaspoon or knife, remove the pulp, leaving walls about 5 mm thick.
- Chop the beet pulp with a knife or grate on a fine grater. In a bowl, combine cottage cheese, sour cream, chopped beet pulp. Add crushed garlic, chopped nuts, salt and pepper. Mix everything well.
- Fill the prepared beetroot cups with the curd filling. Decorate with herbs if desired. Refrigerate for 15–20 minutes to allow the filling to soak in the flavors.
