Swedish cuisine is famous for its simplicity and naturalness. One of the favorite treats of the Swedes is pancakes. These small and thin pancakes are often served with berries, jam or whipped cream. Ingredients

For the dough:

  • Milk – 300 ml
  • Eggs – 2 pcs.
  • Wheat flour – 150 g
  • Sugar – 1-2 tbsp. (to taste)
  • Salt – a pinch
  • Vanilla sugar – 1 tsp (optional)
  • Baking powder – 1 tsp
  • Melt butter – 2 tbsp

For serving:

  • Fresh or frozen blueberries – 150-200 g
  • Icing sugar or honey – to taste
  • Whipped cream, sour cream or yogurt – optional

Step-by-step recipe

  • In a deep bowl, beat the eggs with sugar and vanilla sugar until lightly foamed. Add milk, a pinch of salt and melted butter. Gradually pour in the sifted flour with baking powder, mix well to avoid lumps. The dough should have the consistency of liquid sour cream.
  • If you use frozen blueberries, defrost them a little and strain off the excess juice so that the dough does not become watery. Gently fold the berries into the batter with a spoon.
  • Heat a frying pan with a drop of oil. Pour a small amount of batter, forming a circle 8-10 cm in diameter. Fry over medium heat until bubbles appear, then carefully flip over and fry the other side until golden brown. Repeat until the batter is gone.
  • Stack or fan the finished pancakes onto a plate. Sprinkle with powdered sugar, garnish with additional blueberries and add a spoonful of whipped cream, yogurt or honey.
