Creamy Beetroot Soup with Yogurt and Garlic

Ingredients:
- 2-3 medium beets
- 1 carrot
- 1 potato
- 1 liter of vegetable broth
- 2 cloves of garlic
- natural yogurt or sour cream – for serving
Preparation:
- Peel the beets, carrots, and potatoes and cut into cubes.
- Simmer in broth until soft. Add garlic and blend until creamy.
- Serve with a spoonful of yogurt and herbs.
Beetroot, Goat Cheese, and Walnut Salad

Ingredients:
- 2 beets, baked or boiled
- 100 g soft goat cheese
- a handful of walnuts
- mixed salad leaves
- olive oil, balsamic vinegar
Directions:
- Cut the beets into cubes or wedges.
- Arrange the salad leaves on a plate, top with the beets, goat cheese crumbles, and nuts.
- Drizzle with olive oil and balsamic vinegar.
Warm Beetroot and Lentil Stew

Ingredients:
- 2-3 beets
- 1 cup red lentils
- 1 carrot
- 1 onion
- 2 tbsp. tomato paste
- Spices: cumin, coriander, black pepper
Preparation:
- Grate or cut the beets and carrots into strips.
- Fry the onion in a pan, add the vegetables and tomato paste.
- Pour in the lentils, cover with water, and simmer for 20-25 minutes until tender.
- Season with spices.
