Ingredients:

  • Shrimp – 400 g
  • Potatoes – 3
  • Carrots – 1
  • Onion – 1
  • 20% cream – 200 ml
  • Butter – 30 g
  • Garlic – 2 cloves
  • Salt, pepper, and dill – to taste

Preparation:

  • Peel the shrimp (if peeled) and boil them in salted water for 3-4 minutes.
  • In a separate saucepan, melt the butter and fry the finely chopped onion, carrot, and garlic until soft.
  • Add the diced potatoes and pour in a liter of boiling water or fish stock. Cook until the potatoes are tender.
  • Pour in the cream, add the shrimp, and season with salt and pepper. Cook for another 3-5 minutes, without bringing to a boil.
  • Serve with herbs and a slice of lemon.

Mediterranean Tomato Soup with Seafood

  • Mixed seafood (squid, mussels, octopus) — 500 g
  • Tomatoes in their own juice — 400 g
  • Onion — 1
  • Bell pepper — 1
  • Olive oil — 2 tbsp
  • White wine (optional) — 100 ml
  • Salt, pepper, and basil — to taste

Directions:

  • Chop the onion and pepper and sauté them in olive oil until soft.
  • Add chopped tomatoes (or tomatoes in their own juice) and simmer briefly to thicken the sauce.
  • Pour in 0.5 liters of water (or broth), adding more wine if desired.
  • When the soup comes to a boil, add the seafood and simmer for 7-10 minutes.
  • Season with salt, pepper, and basil.
  • Serve hot, sprinkled with fresh herbs and toasted garlic baguette.
