Classic Shrimp and Cream Soup

Ingredients:
- Shrimp – 400 g
- Potatoes – 3
- Carrots – 1
- Onion – 1
- 20% cream – 200 ml
- Butter – 30 g
- Garlic – 2 cloves
- Salt, pepper, and dill – to taste
Preparation:
- Peel the shrimp (if peeled) and boil them in salted water for 3-4 minutes.
- In a separate saucepan, melt the butter and fry the finely chopped onion, carrot, and garlic until soft.
- Add the diced potatoes and pour in a liter of boiling water or fish stock. Cook until the potatoes are tender.
- Pour in the cream, add the shrimp, and season with salt and pepper. Cook for another 3-5 minutes, without bringing to a boil.
- Serve with herbs and a slice of lemon.
Mediterranean Tomato Soup with Seafood

Ingredients:
- Mixed seafood (squid, mussels, octopus) — 500 g
- Tomatoes in their own juice — 400 g
- Onion — 1
- Bell pepper — 1
- Olive oil — 2 tbsp
- White wine (optional) — 100 ml
- Salt, pepper, and basil — to taste
Directions:
- Chop the onion and pepper and sauté them in olive oil until soft.
- Add chopped tomatoes (or tomatoes in their own juice) and simmer briefly to thicken the sauce.
- Pour in 0.5 liters of water (or broth), adding more wine if desired.
- When the soup comes to a boil, add the seafood and simmer for 7-10 minutes.
- Season with salt, pepper, and basil.
- Serve hot, sprinkled with fresh herbs and toasted garlic baguette.
Thai Soup with Coconut Milk and Seafood

Ingredients:
- Mixed seafood – 400 g
- Coconut milk – 400 ml
- Ginger – 2 cm
- Lemongrass or lime juice – to taste
- Curry paste (red or green) – 1 teaspoon
- Fish sauce – 1 tablespoon
- Water – 300 ml
- Cilantro and green onions – for serving
Directions:
- Heat a little oil in a saucepan and fry the curry paste with grated ginger until fragrant.
- Pour in the coconut milk and water, bring to a gentle simmer.
- Add the seafood and cook for 5-7 minutes.
- Season with fish sauce and lime juice.
- Remove from heat and serve garnished with green onions and cilantro.
