Zucchini pancakes with minced fish are a tender, aromatic and at the same time light dish that will appeal to both adults and children. Unlike the meat version, fish pancakes are less fatty, but no less satisfying. They are especially tasty when cooked with white fish fillet – cod, pollock or hake. Ingredients:

  • Zucchini – 2 medium (about 500 g)
  • Minced white fish (cod, hake, pollock) – 300 g
  • Egg – 1 pc.
  • Flour – 3-4 tbsp.
  • Onion – 1 small onion
  • Garlic – 1 clove
  • Salt – to taste
  • Ground black pepper – to taste
  • Greens (dill, parsley) – to taste
  • Vegetable oil – for frying

Step-by-step preparation:

  • Grate the zucchini on a coarse grater. Salt and leave for 10 minutes so that they release juice. After that, squeeze the mass well with your hands or through cheesecloth – excess moisture is not needed.
  • If you are using fish fillet, mince it in a meat grinder or chop it in a blender. Add finely chopped onion, chopped garlic, salt, pepper and chopped greens to the minced meat. Combine the minced fish with the squeezed zucchini, add the egg and flour. Mix until smooth. The mixture should be thick but flexible. If too runny, add a little more flour.
  • Heat a frying pan with vegetable oil. Spoon the dough into the pancakes. Fry over medium heat for 3-4 minutes on each side until golden brown. To ensure the fish is well-baked, you can fry it under a lid.
