Ingredients
- 2 large eggplants
- 400 g minced meat (pork, beef or chicken)
- 2 medium onions
- 3 cloves garlic
- 2 large tomatoes
- 1 sweet pepper
- 200 g hard cheese
- 2 tbsp. l. vegetable oil
- Salt, pepper to taste
- Fresh herbs for decoration (dill, parsley)
Step-by-step recipe for preparing eggplant with meat
- Wash the eggplants and cut them into slices about 1 cm thick. Salt the sliced eggplants and leave for 20 minutes to remove the bitterness. Then rinse them with cold water and dry them with a paper towel.
- Heat vegetable oil in a frying pan. Cut the onion into small cubes and fry until golden brown. Add minced meat to the onion, salt and pepper to taste. Fry until the meat is cooked, stirring constantly. Chop the garlic and add it to the minced meat a couple of minutes before the end of frying.
- Cut the tomatoes and bell peppers into cubes. In a separate pan, fry the tomatoes and peppers until soft. Mix fried vegetables with minced meat.
- Preheat the oven to 180°C. Place the eggplant slices on a baking sheet greased with vegetable oil. Place the meat filling on each eggplant slice. Sprinkle grated cheese on top.
- Place the baking sheet in the preheated oven and bake for about 20-25 minutes until the cheese is melted and lightly browned.
- Garnish the finished dish with fresh herbs and serve hot.
