Cucumber salads are considered one of the most delicious and healthy. But if you want to diversify your menu, you should try unusual dishes, for example, with fried cucumbers. They are very nutritious. We at joy-pup offer a recipe for a summer salad with fried cucumbers that you will definitely like.
Ingredients:
- Fresh cucumbers – 3-4 pcs.
- Tomatoes – 2-3 pcs.
- Red onion – 1 pc.
- Bell pepper – 1 pc.
- Parsley or dill – a small bunch
- Garlic – 2 cloves
- Olive oil – 2-3 tbsp.
- Lemon juice – 1 tbsp. spoon
- Salt, pepper — to taste
Step-by-step preparation of a summer salad of fried cucumbers:
- Wash and dry the cucumbers thoroughly, cut them into thin slices or circles.
- Heat a little olive oil in a frying pan and fry the cucumbers over medium heat until golden brown, about 2-3 minutes on each side. Place the finished cucumbers on a paper towel to remove excess oil.
- Cut the tomatoes into slices or wedges, cut the red onion into thin half rings, cut the bell pepper into strips. Finely chop the greens, peel the garlic and cut into thin slices.
- In a large bowl, combine the chopped vegetables, herbs and garlic. Add the fried cucumbers, salt and pepper to taste.
- Pour olive oil and lemon juice over the salad, mix well.
Decorate the finished salad with herbs and, if desired, add some grated cheese or nuts for extra flavor.
