Zucchini rolls with shrimp and avocado

Ingredients:

  • 2 medium zucchini
  • 12 large prawns, peeled and boiled
  • 1 avocado cut into thin strips
  • Soy sauce for serving
  • 1 tablespoon vegetable oil

Step by step preparation:

  • Slice the zucchini into thin strips using a vegetable peeler or mandolin.
  • Heat a skillet over medium heat and add vegetable oil.
  • Saute the zucchini for 1-2 minutes on each side until they are soft but retain their shape.
  • Lay two strips of avocado and one shrimp on top of each courgette and carefully roll into rolls.
  • Serve with soy sauce.

Zucchini chips with paprika and parmesan

Ingredients:

  • 2 large zucchini
  • 2 tablespoons olive oil
  • 1 teaspoon sweet paprika
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan

Step by step preparation:

  • Preheat oven to 200 degrees Celsius.
  • Cut the zucchini into thin round slices.
  • In a bowl, mix olive oil, paprika, salt and pepper.
  • Dip each zucchini into the mixture so that they are evenly coated.
  • Place the zucchini chips on a baking sheet, sprinkle them with grated parmesan and bake in the oven for about 15-20 minutes until golden brown.
  • Serve hot.

Zucchini lasagne with mushrooms and cheese

Add zucchini to classic lasagna. It will make it more tender in texture and taste.

Ingredients:

  • 2 large zucchini
  • 250 g mushrooms, chopped
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 cup grated mozzarella
  • 1 cup tomato sauce
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Step by step preparation:

  • Cut the zucchini into long thin slices.
  • Heat a skillet over medium heat, add vegetable oil and sauté the onion and garlic until soft.
  • Add mushrooms and fry them until they turn golden.
  • Pour the tomato sauce into the pan, add salt and pepper to taste and simmer for 5-7 minutes.
  • In a pre-greased baking dish, lay out a layer of zucchini, then a layer of mushroom filling and sprinkle with mozzarella. Repeat layers until you run out of ingredients.
  • Bake in a preheated oven at 180 degrees Celsius for about 25-30 minutes until the top of the lasagna is golden.

Zucchini pancakes with sesame seeds and sweet and sour sauce

You can cook diet pancakes from zucchini. Ingredients:

  • 2 large zucchini, grated
  • 1 egg
  • 2 tablespoons flour
  • 2 tablespoons sesame
  • 1 teaspoon soda
  • Salt and pepper to taste
  • Vegetable oil for frying

Step by step preparation:

  • In a bowl, mix the grated zucchini, egg, flour, sesame seeds, soda, salt and pepper until a homogeneous dough is obtained.
  • Heat a skillet over medium heat and add vegetable oil.
  • Spoon portions of the dough into the pan and form pancakes. Fry them on each side until golden brown.
  • Place fritters on paper towel to remove excess fat.
  • Serve pancakes with sweet and sour sauce.

Ingredients for sweet and sour sauce:

  • 1/2 cup ketchup
  • 1/2 cup rice vinegar
  • 1/2 cup brown sugar (you can adjust the amount according to your preference)
  • 1 tablespoon soy sauce
  • 1 teaspoon freshly squeezed ginger juice
  • 1 teaspoon starch
  • 1/4 teaspoon garlic powder (or 1 clove of fresh garlic, minced)

Cooking:

  • In a small saucepan, combine ketchup, rice vinegar, brown sugar, and soy sauce. Stir until the sugar is completely dissolved.
  • Add the ginger juice to the ketchup and vinegar mixture.
  • Stir the starch into a small amount of water to make a smooth paste.
  • Place the saucepan over medium heat and, stirring, bring the mixture to a boil.
  • Gradually add the starch paste to the boiling mixture, stirring constantly. Continue to cook the mixture over medium heat until it thickens and becomes more translucent.
  • Add garlic powder or minced garlic to the sauce. Stir for a couple more minutes to distribute the garlic evenly.
  • Once the sauce has reached the desired consistency and flavor, remove it from the heat.
