Salad with pumpkin and walnuts

Ingredients:

  • 500 g pumpkin, diced
  • 1/2 cup walnuts
  • 100 g goat cheese
  • 4 cups fresh arugula
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Step by step recipe:

  • Preheat the oven to 200 degrees Celsius. Place the pumpkin cubes on a baking sheet, sprinkle with salt, pepper and olive oil, and bake for about 20-25 minutes until the pumpkin is soft and golden.
  • Toast the walnuts in a dry frying pan for a few minutes until fragrant. Cool them and roughly chop them.
  • Prepare the dressing by mixing olive oil and balsamic vinegar.
  • In a large bowl, combine arugula, roasted pumpkin, nuts and goat cheese. Pour over the dressing and stir gently.

Preparation:
