Salad with pumpkin and walnuts
Ingredients:
- 500 g pumpkin, diced
- 1/2 cup walnuts
- 100 g goat cheese
- 4 cups fresh arugula
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Step by step recipe:
- Preheat the oven to 200 degrees Celsius. Place the pumpkin cubes on a baking sheet, sprinkle with salt, pepper and olive oil, and bake for about 20-25 minutes until the pumpkin is soft and golden.
- Toast the walnuts in a dry frying pan for a few minutes until fragrant. Cool them and roughly chop them.
- Prepare the dressing by mixing olive oil and balsamic vinegar.
- In a large bowl, combine arugula, roasted pumpkin, nuts and goat cheese. Pour over the dressing and stir gently.
Salad with pear and blue cheese
Ingredients:
- 2 pears, thinly sliced
- 150 g blue cheese (eg Gorgonzola or Roquefort)
- 4 cups greens
- 1/2 cup walnuts
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Preparation:
- In a large bowl, combine the herbs, pear slices and walnuts.
- Prepare the dressing by mixing olive oil, balsamic vinegar, salt and pepper.
- Pour the dressing over the salad and toss gently.
- Sprinkle the salad with crumbled blue cheese before serving.
Autumn salad with cranberries and chicken
Ingredients:
- 2 chicken breasts, fried and sliced
- 2 cups fresh cranberries
- 1 large carrot, grated on a coarse grater
- 4 cups greens
- 1/2 cup walnuts
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Step-by-step preparation:
- In a bowl, combine the greens, cranberries, grated carrots and roasted chicken.
- Prepare the dressing by mixing olive oil, apple cider vinegar, honey, salt and pepper.
- Pour the dressing over the salad and toss gently.
- Sprinkle with walnuts before serving.
Salad with buckwheat and nuts
Ingredients:
- 1 cup buckwheat, cooked and cooled
- 1/2 cup walnuts
- 1 red onion, sliced into rings
- 1/2 cup chopped parsley
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Step-by-step preparation:
- In a large bowl, combine buckwheat, walnuts, onion and parsley.
- Prepare the dressing by mixing olive oil, lemon juice, salt and pepper.
- Pour the dressing over the salad and toss well.
Salad with cabbage, apples and nuts
Ingredients:
- 4 cups chopped red cabbage
- 2 red apples, diced
- 1/2 cup walnuts
- 1/4 cup red onion, thinly sliced
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Step-by-step preparation:
- In a large bowl, combine red cabbage, chopped apples, walnuts and onion.
- Prepare the dressing by mixing olive oil, apple cider vinegar, honey, salt and pepper.
- Pour the dressing over the salad and mix thoroughly. Serve immediately or refrigerate for richer flavor.
