Vegetarian dishes are distinguished by their variety. They can be prepared from a variety of ingredients, including lentils. It is rich in protein, vitamins and minerals. Therefore, it is often used as the main ingredient. We at joy-pup offer several unusual vegetarian lentil dishes.
Lentil soup with vegetables

Ingredients:
- 1 cup red lentils
- 2 carrots, cut into circles
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 1 ginger root, grated
- 400 ml coconut milk
- 1 liter vegetable broth
- Salt and pepper to taste
Step by step recipe:
- Rinse the lentils and set aside.
- In a large saucepan over medium heat, sauté onion, carrots, garlic and ginger until soft.
- Add lentils, coconut milk and vegetable broth. Bring to a boil.
- Reduce heat and simmer until lentils are soft.
- Season with salt and pepper to taste. Serve hot.
Lentil pate

Ingredients:
- 1 cup red lentils
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon turmeric
- 1 teaspoon ground coriander
- Salt and pepper to taste
- 2 tbsp. spoons of olive oil
Step by step recipe:
- Cook red lentils until soft, drain.
- Fry the onion and garlic in olive oil until golden.
- Add fried onions and garlic, as well as spices, to the lentils. Stir.
- Using a blender, puree the mixture to a pate consistency.
- Serve chilled on bread or crackers.
Lentil cutlets

Ingredients:
- 1 cup red lentils
- 1 onion, finely chopped
- 2 tbsp. spoons of tomato paste
- 1 egg
- 1 teaspoon sesame oil
- 1 teaspoon turmeric
- Salt and pepper to taste
Step by step recipe:
- Cook the lentils until soft, let them cool.
- Combine lentils with remaining ingredients in a large bowl.
- Form cutlets and fry them in a frying pan on both sides until golden brown.
- Serve the patties with a vegetable salad or on a burger bun.
Lentil salad with feta cheese

Ingredients:
- 1 cup red lentils
- 1 cucumber, diced
- 1 tomato, chopped
- 100 g feta, diced
- 2 tbsp. tablespoons fresh lemon juice
- 2 tbsp. spoons of olive oil
- Salt and pepper to taste
Step by step recipe:
- Cook the red lentils until tender and let them cool.
- In a large bowl, combine lentils, cucumber, tomato and feta.
- In a separate bowl, combine lemon juice, olive oil, salt and pepper. Pour this sauce over the salad.
- Stir and serve.
Lentil flatbreads

Ingredients:
- 1 cup red lentils (pre-soaked overnight)
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 2 tbsp. tablespoons flour (optional)
- Salt and pepper to taste
Step by step recipe:
- Strain the lentils and place in a blender along with the onion, garlic and cumin. Grind until smooth.
- Add flour, salt and pepper to taste. Stir.
- Form the dough into flat cakes and fry them in a frying pan on both sides until golden brown.
- Serve the flatbreads with your choice of yogurt or sauce.
