Ingredients:
- 300 g pumpkin (cut into cubes)
- 100 g goat cheese (crumbled)
- 50 g walnuts (toasted)
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 100 g arugula
- Salt and pepper to taste

Preparation:
- Preheat the oven to 200°C. Place the diced pumpkin on a baking sheet, drizzle with olive oil, sprinkle with salt, and roast for 20-25 minutes until soft.
- In a bowl, combine the arugula, toasted walnuts, and roasted pumpkin.
- Sprinkle the salad with goat cheese and drizzle with balsamic vinegar.
