Ingredients (for 4 servings):

  • Pasta (penne, farfalle or rigatoni) – 300 g
  • Mushrooms (champignons, oyster mushrooms or porcini) – 250 g
  • Tomatoes (fresh or cherry) – 200 g
  • Onions – 1 pc.
  • Garlic – 2 cloves
  • Tomato sauce – 200 ml
  • Olive oil – 2 tbsp
  • Hard cheese (mozzarella, parmesan or gouda) – 150 g
  • Italian herbs (oregano, basil) – 1 tsp
  • Salt and black pepper – to taste
  • Fresh basil for garnish

Step-by-step recipe

  • Boil water, add salt and cook pasta until al dente (about 2 minutes less than indicated on the package). Drain in a colander and drizzle with olive oil to prevent sticking.
  • Heat 1 tbsp olive oil in a frying pan. Finely chop the onion and garlic, fry until golden brown. Then add the sliced ​​mushrooms and cook for 5-7 minutes until the liquid evaporates.
  • Pour the tomato sauce into the pan with the mushrooms, add the chopped tomatoes, herbs, salt and pepper. Simmer for 5 minutes on low heat to allow the sauce to soak up the flavors.
  • Combine the boiled pasta with the sauce in a deep bowl and stir.
  • Preheat the oven to 180°C. Place the mixture in a baking dish and sprinkle with grated cheese on top.
  • Place in the oven and bake for 15-20 minutes until the cheese melts and turns golden brown.
