Croquettes are delicious balls or sticks with a tender filling inside and a crispy crust outside. They can be meat, vegetable, fish, but boiled egg croquettes are especially popular. This dish is prepared quickly, requires a minimum of ingredients and turns out incredibly tasty. We at joy-pup will tell you how to cook boiled egg croquettes. Ingredients
- Boiled eggs – 5-6 pcs.
- Raw egg – 1 pc. (for breading)
- Flour – 2-3 tbsp.
- Breadcrumbs — 100 g
- Milk — 50 ml
- Butter — 30 g
- Hard cheese (optional) — 50 g
- Dill or parsley — 1–2 tbsp
- Salt — to taste
- Ground black pepper — to taste
- Vegetable oil — for frying
Step-by-step recipe for egg croquettes
- Boil the eggs hard (cook for about 8–10 minutes after the water boils). Cool them in cold water, peel and finely chop with a knife or grate on a coarse grater.
- If using cheese, grate it as well. Mix the chopped eggs with the cheese, add finely chopped herbs, salt and pepper to taste.
- Melt the butter in a frying pan, add the flour and quickly stir with a whisk to avoid lumps. Pour in the milk in portions, stirring constantly, until the mixture becomes thick, like custard.
- Remove the sauce from the heat and combine it with the egg mixture. Mix thoroughly. Let the mixture cool slightly so that it becomes denser and easier to form croquettes.
- Form small balls or oblong sticks the size of a walnut from the prepared mixture. If the mixture sticks to your hands, moisten them with water.
- First roll each croquette in flour, then dip it in beaten raw egg, and then roll it thoroughly in breadcrumbs. The breading should be dense – this will ensure a crispy crust when frying.
- Heat vegetable oil in a deep frying pan or in a deep fryer. There should be enough oil so that the croquettes float freely. Fry the croquettes in batches until golden brown on all sides. This usually takes 2-3 minutes.
