Carrot pate is a tender, aromatic and healthy spread that is ideal for sandwiches, crackers or as an addition to vegetables. It turns out to be rich in taste, slightly sweet and goes well with nuts, spices and garlic. We joy-pup tell you how to make a delicious carrot pate.
Ingredients:
- 3 medium carrots
- 1 small onion
- 2 cloves of garlic
- 50 g walnuts (or cashews)
- 2 tbsp. spoons of olive oil
- 1 teaspoon of lemon juice
- ½ teaspoon of ground paprika
- ½ teaspoon of ground coriander
- Salt and black pepper to taste

Step-by-step recipe:
- Peel the carrots, cut into circles or small pieces. Boil water and boil the carrots until soft (about 10-15 minutes). You can also bake the carrots in the oven at 180°C for 25-30 minutes – this will make the taste richer.
- Cut the onion into small cubes, chop the garlic. Heat a frying pan with 1 tablespoon of olive oil and fry the onion until golden brown. Add the garlic and cook for another 1 minute.
- Lightly fry the walnuts in a dry frying pan so that they become more aromatic.
- Place the boiled (or baked) carrots, fried onions and garlic, nuts, the remaining spoon of olive oil, lemon juice, spices, salt and pepper in a blender bowl. Blend until smooth. If the pate is too thick, add a little water or olive oil. Transfer the carrot pate to a container or serving plate, garnish with herbs, chopped nuts or sesame seeds.
Serve with bread, toast or as a filling for lavash rolls.
