Ingredients

For the curd mass:

  • 500 g homemade cottage cheese
  • 150 g butter
  • 200 g sugar
  • 200 ml cream (33%)
  • 5 yolks
  • 10 g vanilla sugar
  • 1 tbsp. lemon juice
  • 10 g gelatin

For the liquid filling:

  • 150 g white chocolate
  • 100 ml cream (33%)
  • 1 tbsp butter

Step-by-step recipe

  • Pour 50 ml of warm water over the gelatin and leave to swell for 10-15 minutes.
  • Press the cottage cheese twice through a sieve or beat with a blender until smooth. Add soft butter, yolks, sugar, vanilla sugar and lemon juice.
  • Heat the cream, but do not bring to a boil. Add the swollen gelatin and mix well.
  • Combine the cream with the curd mass, mix thoroughly.
  • Melt the white chocolate in a water bath. Add the cream and butter, mix until smooth.
  • Line the Easter cake mold with gauze (it is better to use a special mold for cottage cheese Easter cake). Put half of the curd mass, make a depression with a spoon and pour in the liquid filling. Cover with the remaining curd mass and form a mold.
  • Cover the paskha with gauze, put it under pressure and leave in the refrigerator for 10-12 hours.
  • Carefully remove the paskha from the mold, turning it over onto a plate. Decorate to your taste: with chocolate icing, dried fruits or candied fruits.

If you want baked curd paskha, then add 2 tbsp. starch or 3 tbsp. flour to the cheese mass. Put half of the mass in the mold, make a depression and add the filling. Cover the paskha with the remaining dough and bake in the oven at 160 degrees for 40-50 minutes.
