Salad with shrimp and avocado
Ingredients:
- 200 g shrimp, peeled and boiled
- 2 ripe avocados
- 1 large tomato
- 1/2 red onion
- 1/4 cup fresh cilantro, finely chopped
- Juice of 1 lime
- 2 tbsp. spoons of olive oil
- Salt and pepper to taste
Step by step preparation:
- Cut the avocado and tomatoes into cubes, finely chop the onion.
- In a large bowl, combine shrimp, avocado, tomato and onion.
- In a separate bowl, mix lime juice, olive oil, salt and pepper.
- Drizzle salad dressing over salad and sprinkle with cilantro. Stir.
- Serve the salad chilled.
Greek salad with squid
Ingredients:
- 300 g squid, sliced and fried
- 1 cucumber, diced
- 1 red bell pepper, diced
- 1/2 red onion, thinly sliced
- 200 g cherry tomatoes, cut in half
- 100 g olives
- 100 g Greek cheese (feta), diced
- 2 tbsp. spoons of olive oil
- 2 tbsp. spoons of lemon juice
- Salt and pepper to taste
Step by step preparation:
- Combine squid, cucumber, red pepper, onion, tomatoes, olives and Greek cheese in a large bowl.
- In a separate bowl, mix olive oil, lemon juice, salt and pepper.
- Pour the dressing over the salad and mix gently.
- Serve the salad topped with fresh herbs, if desired.
Salad with tuna, oranges and walnuts
Ingredients:
- 200 g fresh tuna
- 2 oranges cut into rings
- 1/4 cup walnuts, roughly chopped
- 2 tbsp. spoons of olive oil
- 1 st. a spoonful of soy sauce
- 1 st. honey spoon
- Salt and pepper to taste
Step by step preparation:
- Grill or fry the tuna for 1-2 minutes on each side. Cut it into thin slices.
- In a large bowl, combine tuna, oranges and walnuts.
- In a separate bowl, mix olive oil, soy sauce, honey, salt and pepper. Pour dressing over salad and toss gently.
- Serve the salad cold.
Mussel salad with cucumber and basil
Ingredients:
- 500 g mussels
- 1 cucumber, diced
- 1 tomato, diced
- 1/2 red onion, finely chopped
- 1/4 cup fresh basil, finely chopped
- 2 tbsp. spoons of olive oil
- 2 tbsp. spoons of balsamic vinegar
- 1 teaspoon honey
- Salt and pepper to taste
Step by step preparation:
- Clean the mussels, remove the shells and wash them thoroughly.
- Heat the olive oil in a deep saucepan or frying pan and sauté the onion until soft.
- Add the mussels and fry them for 3-4 minutes until they open.
- In a large bowl, combine cucumber, basil, tomatoes and strained mussels.
- In a seasoning bowl, combine olive oil, balsamic vinegar, honey, salt and pepper. Pour the dressing over the salad and toss gently.
- Chill the salad in the refrigerator before serving.
