Salad with watermelon, cucumbers and mint

Ingredients:

  • 4 cubes of fresh watermelon, without peel or seeds
  • 2 medium cucumbers, cut into thin slices
  • 1/4 red onion, cut into rings
  • 2 tablespoons fresh mint, minced
  • 100 gr. feta or brynza cheese, diced
  • Salt and freshly ground black pepper to taste
  • Juice of 1/2 lemon

Step by step preparation:

  • In a large bowl, gently mix together the watermelon cubes, cucumbers, and red onion.
  • Add chopped mint and cubes of feta or cheese.
  • Sprinkle with salt and freshly ground black pepper to taste.
  • Pour the lemon juice over the salad and toss gently. Ready!

Salad with watermelon, avocado and shrimps

Ingredients:

  • 200 gr. shrimp, boiled and peeled
  • 2 cubes of fresh watermelon, without peel or seeds
  • 1 medium avocado, diced
  • 1/4 red onion, cut into rings
  • 1/4 cup walnuts, chopped
  • 50 gr. fresh spinach leaves
  • For dressing: 2 tablespoons olive oil, 1 tablespoon lemon juice, salt and pepper to taste

Step by step preparation:

  • In a large bowl, combine the shrimp, watermelon cubes, chopped avocado, and red onion.
  • Sprinkle the salad with chopped walnuts and add the spinach leaves.
  • In a small bowl, combine olive oil, lemon juice, salt and pepper for dressing.
  • Pour this dressing over the salad and toss gently. Ready!

Salad with watermelon, mozzarella and basil

Ingredients:

  • 4 cubes of fresh watermelon, without peel or seeds
  • 150 gr. mozzarella, cut into cubes or small balls
  • 1/4 cup fresh basil leaves
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper to taste

Step by step preparation:

  • In a large bowl, gently mix together the watermelon and mozzarella cubes.
  • Sprinkle with fresh basil leaves.
  • In a separate bowl, mix the olive oil and balsamic vinegar for the dressing.
  • Drizzle this dressing over the salad and season with salt and pepper to taste.
  • Gently mix all the ingredients so that the salad is evenly soaked in the dressing. Ready!
