Creamy pumpkin soup
Ingredients:
- 500 g pumpkin, cut into cubes
- 1 onion, chopped
- 1 slice fresh ginger, minced
- 4 cups vegetable broth
- 1 cup cream
- Salt and pepper to taste
- Oil for frying
Step-by-step preparation:
- Fry the onion and ginger in a frying pan with oil until soft.
- Add pumpkin and fry for a few minutes.
- Pour in the vegetable broth and cook until the pumpkin is soft.
- Use a blender to puree the soup.
- Return the soup to the pan, add the cream and reheat.
- Season with salt and pepper and serve hot with brown bread crumbs.
Cream of mushroom soup with cream
Ingredients:
- 400 g champignons, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 cup cream
- 1 teaspoon fresh thyme
- Salt and pepper to taste
- Olive oil for frying
Step-by-step preparation:
- Fry the onion and garlic in olive oil until translucent.
- Add the mushrooms and fry until they turn golden.
- Pour in the chicken broth and cook until the mushrooms are soft.
- Using a blender, turn the soup into a thick mass.
- Return the soup to the pan, add the cream and thyme, and heat through.
- Season with salt and pepper and serve with croutons.
Cream soup with cream and broccoli
Ingredients:
- 0.3 kg broccoli
- 1 onion, finely chopped
- 3 cups vegetable broth
- 1 cup cream
- 1 teaspoon dried lavender
- Salt and pepper to taste
- Oil for frying
Step-by-step preparation:
- Fry the onion in oil until golden.
- Add the broccoli florets and sauté for a few minutes.
- Pour in the vegetable broth and cook until the broccoli is soft.
- Using a blender, puree the soup into a smooth mass.
- Return the soup to the pan, add the cream and lavender, and heat through.
- Season with salt and pepper and serve garnished with lavender flowers.
