Ingredients:

  • Red cabbage – 500 g
  • Carrots – 1 pc.
  • Onions – 1 pc.
  • Fresh cilantro – 1 bunch
  • Walnuts – 50 g
  • Garlic – 2-3 cloves
  • Wine vinegar – 2 tbsp.
  • Olive oil – 3 tbsp. l.
  • Salt and ground black pepper – to taste
  • Hot pepper – optional
  • Sugar – 1 tsp.

Step-by-step recipe for making Georgian salad with red cabbage

  • Rinse the red cabbage thoroughly under cold water and dry it. Cut it into thin strips.
  • Place it in a deep bowl, sprinkle it with salt and lightly knead it with your hands. This will make the cabbage softer and allow it to better absorb the dressing.
  • Peel the carrots and grate them on a coarse grater, cut the onion into thin half rings. Wash and finely chop the fresh cilantro.
  • Lightly fry the walnuts in a dry frying pan to make them more aromatic. Then chop them with a knife or blender.
  • Peel the garlic and finely chop it or pass it through a press.
  • Add grated carrots, onion, cilantro, garlic and walnuts to the bowl with the cabbage.
  • In a separate small bowl, mix together the olive oil, wine vinegar, sugar, salt and pepper. If desired, you can add some hot pepper for a piquant flavor.
  • Pour the prepared dressing over the salad and mix well so that all the ingredients are evenly soaked.
  • Leave the dish for 15-20 minutes to infuse and the flavors to mix.

Before serving, mix the salad again and add salt or vinegar to taste if necessary. Garnish the dish with fresh cilantro or nuts and serve.
