A variety of dishes can be prepared from nuts. They are used as ingredients for desserts and more. Moreover, such dishes are nutritious and rich in useful microelements. We at joy-pup tell you how to make delicious nut soup.
Ingredients:
- 200 g walnuts
- 1 onion
- 2 cloves garlic
- 1 carrot
- 2 stalks of celery
- 2 potatoes
- 1 liter vegetable broth
- 200 ml cream (fat content of your choice)
- 2 tbsp. spoons of olive oil
- Salt and pepper to taste
- Fresh herbs (dill or parsley) for serving
Step-by-step recipe for making nut soup
- Walnuts need to be shelled if you use unshelled ones. Place them in a blender and grind until fine crumbs. You can also use a food processor.
- Peel the onion and cut into small cubes. Peel and chop the garlic. Peel the carrots and grate on a coarse grater. Cut the celery into small pieces. Peel the potatoes and cut into cubes.
- In a large saucepan, heat the olive oil over medium heat. Add onion and sauté until translucent, about 5 minutes. Add garlic, carrots and celery, cook for another 5-7 minutes, stirring occasionally.
- Add potatoes and chopped walnuts to the pan and stir well. Pour in vegetable broth and bring to a boil. Reduce heat and simmer soup for 20-25 minutes until potatoes are tender.
- Remove the soup from the heat and let it cool slightly. Using an immersion blender or food processor, puree the soup until smooth. If you like it thicker, leave some of the vegetables unchopped.
- Return the soup to the heat, add cream and heat through, but do not bring to a boil. Salt and pepper to taste.
- Garnish the soup with fresh herbs and, if desired, add a few whole walnuts for decoration. Serve hot with a slice of fresh bread or croutons.
