Ingredients:

  • Egg yolks – 3 pcs.
  • Butter – 150 g (unsalted).
  • Lemon juice – 1 tbsp.
  • Water – 1 tbsp.
  • Salt – to taste.
  • White pepper – to taste (can be replaced with black, but in minimal quantities).

Step-by-step recipe for hollandaise sauce

  • Before you start cooking, make sure that all the ingredients are at room temperature. Melt the butter over low heat and cool slightly.
  • Take two saucepans, one large for the water and one small for the sauce. Pour water into the large saucepan and bring to a gentle simmer. Make sure the bottom of the top saucepan does not touch the water.
  • In a small bowl, combine the egg yolks and water. Pour this mixture into the top saucepan over a double boiler. Whisk constantly until the mixture is thick and creamy.
  • Begin to add the melted butter in a thin stream, whisking constantly. Do this gradually so that the sauce does not separate.
  • Once all the butter has been added, add the lemon juice, salt and pepper. Continue whisking until the sauce is smooth and glossy.
  • Transfer the finished sauce to a warm bowl. Serve immediately, as hollandaise sauce does not keep for long.
