Hollandaise sauce is a classic French sauce that perfectly complements fish, vegetable, egg and even meat dishes. It has a delicate texture and creamy taste that combine perfectly. We at joy-pup tell you how to make hollandaise sauce and offer a simple step-by-step recipe.
Ingredients:
- Egg yolks – 3 pcs.
- Butter – 150 g (unsalted).
- Lemon juice – 1 tbsp.
- Water – 1 tbsp.
- Salt – to taste.
- White pepper – to taste (can be replaced with black, but in minimal quantities).
Step-by-step recipe for hollandaise sauce
- Before you start cooking, make sure that all the ingredients are at room temperature. Melt the butter over low heat and cool slightly.
- Take two saucepans, one large for the water and one small for the sauce. Pour water into the large saucepan and bring to a gentle simmer. Make sure the bottom of the top saucepan does not touch the water.
- In a small bowl, combine the egg yolks and water. Pour this mixture into the top saucepan over a double boiler. Whisk constantly until the mixture is thick and creamy.
- Begin to add the melted butter in a thin stream, whisking constantly. Do this gradually so that the sauce does not separate.
- Once all the butter has been added, add the lemon juice, salt and pepper. Continue whisking until the sauce is smooth and glossy.
- Transfer the finished sauce to a warm bowl. Serve immediately, as hollandaise sauce does not keep for long.
