Ingredients:

  • Butter – 50 g
  • Olive oil – 2 tbsp.
  • Garlic – 2 cloves
  • Lemon – 1 pc.
  • Dry white wine – 50 ml (optional)
  • Cream (20-30%) – 100 ml
  • Salt – to taste
  • Ground black pepper – to taste
  • Sugar – 0.5 tsp. (to balance the flavors)
  • Greens (dill, parsley) — for serving

Step-by-step recipe for lemon sauce:

  • Peel the garlic and chop it finely. Wash the lemon well, grate the zest and squeeze out the juice.
  • Melt the butter and olive oil in a saucepan. Add the chopped garlic and fry over low heat until fragrant (do not overcook, otherwise the garlic will become bitter).
  • Pour in the white wine (if using) and let it evaporate a little — about 2-3 minutes. Then add the lemon juice and zest. Stir.
  • Reduce the heat and carefully pour in the cream. Stirring, bring the sauce to a slight thickening. This will take 3-5 minutes. Do not boil so that the cream does not curdle.
  • Add salt, pepper and sugar. Try it — the taste should be gently sweet and sour and aromatic. If necessary, add a little more juice or sugar for balance.
  • Before serving, sprinkle the sauce with finely chopped herbs. Pour it over the hot fish or serve the sauce in a gravy boat.
