Zucchini can be added to a variety of dishes. These vegetables make them juicy and tender. They are often made into pancakes, pickled or fried. But you can also cook cutlets. The editors of joy-pup tell you how to cook juicy cutlets with zucchini.
Ingredients:
- 500 g minced meat (pork, beef or mixture)
- 1 medium zucchini (about 300 g)
- 1 onion
- 1 egg
- 3 tbsp. spoons of semolina or breadcrumbs
- Salt and pepper to taste
- 2-3 cloves of garlic (optional)
- Greens (dill, parsley) to taste
- Vegetable oil for frying
Step-by-step preparation:
- Rinse the zucchini, remove the ends and grate on a coarse grater. If the zucchini is young, you don’t have to remove the peel. If it’s old, it’s better to clean it and remove the seeds.
- Finely chop or grate the onion. Chop the greens.
- In a bowl, combine minced meat, grated zucchini and onion. Add egg, semolina or breadcrumbs. They are needed so that the cutlets keep their shape and do not fall apart.
- Salt and pepper to taste, add chopped garlic and herbs. Mix the mass well.
- Form cutlets of the desired size from the prepared mixture. Heat a frying pan with vegetable oil over medium heat.
- Fry the cutlets on both sides until golden brown, then reduce the heat and cook covered for 5-7 minutes.
- Ready-made zucchini cutlets can be served with any side dish: mashed potatoes, rice, buckwheat or fresh vegetables. They also go well with various sauces, such as sour cream or tomato sauce.
Tips for making zucchini cutlets:
- If the mass turns out to be too liquid, add a little more semolina or crackers.
- To make the cutlets even more tender, the minced meat can be pre-rolled through a meat grinder or blender.
- To vary the taste, you can add grated cheese or carrots to the mixture.
