Step-by-step recipe:

  • Rinse the mint thoroughly under cold water. Separate the leaves from the stems – you only need the leaves for the sauce, as the stems can add bitterness.
  • Finely chop the mint leaves. If you want a smoother sauce, you can use a blender.
  • In a bowl, mix the sugar with the white wine vinegar. Stir well until the sugar dissolves completely.
  • Add boiling water to soften the acidity of the vinegar a little and make the taste more balanced.
