Ingredients:
- Fresh mint – 1 large bunch (about 30-40 g).
- White wine vinegar – 2-3 tbsp.
- Sugar – 1 tbsp.
- Boiling water – 2-3 tbsp.
- Salt – a pinch (to taste).

Step-by-step recipe:
- Rinse the mint thoroughly under cold water. Separate the leaves from the stems – you only need the leaves for the sauce, as the stems can add bitterness.
- Finely chop the mint leaves. If you want a smoother sauce, you can use a blender.
- In a bowl, mix the sugar with the white wine vinegar. Stir well until the sugar dissolves completely.
- Add boiling water to soften the acidity of the vinegar a little and make the taste more balanced.
- Add finely chopped mint to the liquid base. Salt to taste. Stir the sauce and leave for 10-15 minutes to infuse and the mint to release its aroma.
- Before serving, chill the sauce in the refrigerator for 30 minutes. This will enhance its flavor and make it more refreshing.
