Potato croquettes are delicious crispy balls with a delicate filling inside. They are ideal as a side dish for meat and fish, and can also be a stand-alone snack. We at joy-pup tell you how to make them.
Ingredients:
- Potatoes – 500 g
 - Egg yolk – 1 pc.
 - Butter – 30 g
 - Hard cheese (for example, parmesan) – 50 g
 - Salt, pepper – to taste
 - Flour – 2 tbsp.
 - Breadcrumbs – 100 g
 - Egg – 1 pc.
 - Vegetable oil – for frying
 

Step-by-step recipe
- Peel the potatoes and boil them in salted water until soft. Drain the water, add butter and mash into a puree. Let cool slightly. Stir in the egg yolk, grated cheese, salt and pepper.
 - Divide the potato mass into small portions. Roll them into balls or cylinders. Roll the croquettes in flour, dip them in beaten egg and roll in breadcrumbs.
 - Heat the vegetable oil in a deep frying pan or deep fryer. Fry the croquettes until golden brown (2-3 minutes). Place on a paper towel to remove excess fat.
