Ingredients (for 2 servings)

  • Spaghetti – 200 g
  • Lemon – 1 pc. (juice and zest)
  • Cream (20-30%) – 100 ml
  • Butter – 30 g
  • Olive oil – 1 tbsp. spoon
  • Parmesan – 50 g (grated)
  • Garlic – 1 clove
  • Fresh parsley – 1 sprig
  • Salt and black pepper – to taste

Step-by-step recipe

  • Put the water for the spaghetti on the stove. As soon as it boils, add salt (about 1 tbsp per 1 liter of water).
  • Grate the lemon zest on a fine grater, trying not to touch the white part of the peel to avoid bitterness. Then squeeze the lemon juice into a separate container. Finely chop the garlic and fresh parsley.
  • Put the spaghetti in boiling water and cook according to the instructions on the package (usually 7-9 minutes), so that it is not overcooked. Drain the water, leaving a little (about 100 ml) for the sauce.
  • Heat the olive oil and butter in a frying pan over medium heat. Add the chopped garlic and fry gently until it releases its aroma but does not turn brown. Pour in the cream, stir and bring to a gentle simmer.
  • Add the lemon juice and zest, salt and pepper to taste. Stir. The sauce should be smooth.
  • Pour in the grated Parmesan, stir well until the cheese is completely melted. If the sauce is too thick, add a little of the water left after cooking the spaghetti.
  • Transfer the spaghetti to the pan with the sauce. Stir thoroughly so that the pasta is evenly coated with the lemon sauce. Simmer the spaghetti in the sauce for 1-2 minutes over low heat.
  • Divide the spaghetti among plates. Garnish with fresh parsley, add some grated Parmesan on top and, if desired, finely grated lemon zest.
