Stuffed tomatoes with shrimp and herbs – a recipe for an original dish

Stuffed tomatoes can be a great alternative to cabbage rolls or stuffed peppers. They have an original taste, but as a filling you can use not only meat or cheese, but even seafood. We at joy-pup offer a recipe for stuffed tomatoes with shrimp and herbs.

Ingredients:

  • 6 large ripe tomatoes
  • 200 g peeled shrimp
  • 1 bunch of fresh parsley
  • 1 bunch of fresh dill
  • 2-3 sprigs fresh basil
  • 2 cloves garlic
  • 2 tbsp. spoons of olive oil
  • 1 tbsp. spoon of lemon juice
  • Salt and ground black pepper to taste

Step-by-step preparation of stuffed tomatoes with shrimp and herbs

  • Wash the tomatoes thoroughly under running water. Carefully cut off the tops of the tomatoes and set them aside.
  • Using a teaspoon, carefully scoop out the tomato pulp, leaving the sides about 0.5 cm thick. The pulp can be saved for use in sauces or other dishes.
  • Peel and chop the garlic. Rinse the shrimp and, if necessary, remove the intestinal vein. Chop the herbs (parsley, dill and basil) finely.
  • In a large skillet, heat the olive oil over medium heat. Add chopped garlic and fry it until golden brown. Add the shrimp and cook until pink, about 3 to 4 minutes. Season with salt and pepper to taste.
  • Remove the pan from the heat and add the chopped herbs and lemon juice to the shrimp. Mix thoroughly.
  • Fill each tomato cup with the prepared shrimp and herb filling. Cover the tomatoes with the cut caps.
