Greek salad with cucumbers, tomatoes and feta
This is a great addition to the menu in hot weather. This salad pleases with its freshness and bright taste.
Ingredients:
- 2 cucumbers
- 4 tomatoes
- 1 red onion
- 200 g feta
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- Salt and pepper to taste
- Fresh mint (for garnish)
Step by step preparation:
- Cut cucumbers, tomatoes and red onions into thin round slices.
- Break the feta into small pieces.
- In a large bowl, combine cucumbers, tomatoes, red onion and feta.
- Add olive oil, lemon juice, salt and pepper.
- Mix all ingredients well.
- Serve garnished with fresh mint.
Gazpacho
This is a cold soup with tomatoes, which is very refreshing in summer. Ingredients:
- 4 tomatoes
- 1 cucumber
- 1 red pepper
- 1 small onion
- 2 garlic cloves
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- Juice of half a lemon
- Salt and pepper to taste

Step by step preparation:
- Cut the tomatoes, cucumber, red pepper and onion into pieces.
- Place chopped vegetables in a blender, add garlic, olive oil, red wine vinegar and lemon juice.
- Gradually blend all ingredients in a blender until smooth.
- Season with salt and pepper to taste.
- Chill the gazpacho in the refrigerator for a few hours or before serving.
- Serve the soup in chilled bowls, garnished with fresh herbs.
Cake with zucchini and leeks
If you want to make a delicious cake, try this simple step by step recipe.
Ingredients:
- 2 medium zucchini
- 1 large leek
- 3 eggs
- 100 g hard cheese
- 1/2 cup wheat flour
- 1 teaspoon baking powder
- Salt and pepper to taste
- Olive oil (for frying)
Cooking:
- Grate the zucchini on a coarse grater to get a coarse structure.
- Slice the leek into thin rings.
- In a large bowl, combine the zucchini, leek, eggs, grated cheese, flour and baking powder.
- Season with salt and pepper to taste.
- Heat up some olive oil in a frying pan.
- Pour half of the mixture into the skillet and smooth the surface.
- Fry over medium heat until golden brown (about 5-7 minutes).
- Turn the cake over with a plate and fry the other side.
- Repeat the same procedure with the remaining mixture.
- Serve the cake hot or chilled.
Ratatouille
This vegetable dish will decorate any table. It will delight you with its nutritional value and special taste. Ingredients:
- 1 zucchini
- 1 eggplant
- 1 red pepper
- 1 yellow pepper
- 1 bulb
- 3 tomatoes
- 3 garlic cloves
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh herbs (for garnish)
Step by step preparation:
- Cut the zucchini, eggplant, red and yellow peppers, onions and tomatoes into pieces.
- Heat olive oil in a large skillet over medium heat.
- Saute onion and garlic until soft and fragrant.
- Add zucchini, eggplant, and peppers to skillet. Saute vegetables until soft, stirring regularly.
- Add the tomatoes and continue to cook the ratatouille for about 10-15 more minutes, until all the vegetables are soft.
- Season with salt and pepper to taste.
- Sprinkle the ratatouille with fresh herbs such as basil or parsley before serving.
