Ingredients:

  • Eggs (whites) – 2 pcs.
  • Icing sugar – 200-250 g
  • Lemon juice – 1 tsp. (or a pinch of citric acid)
  • Vanilla – optional

Important! Use only fresh eggs and carefully separate the whites from the yolks. The bowl and whisks must be absolutely clean and fat-free.

Step-by-step preparation

  • Whip the egg whites with a mixer at medium speed until foam appears. Then increase the speed and continue whipping until soft peaks form.
  • Gradually add the powdered sugar. Do not pour in all the powder at once, add it 1 tablespoon at a time, continuing to whip. It is important to achieve a dense and smooth consistency, similar to thick sour cream.
  • Add lemon juice. It gives shine and improves the stability of the glaze. It also prevents sugar crystallization.
  • Check the readiness of the glaze, it should be dense, shiny and hold its shape well. You can also add a drop of food coloring to it to get a certain color.
