Green peas with mint and lemon

- 2 cups green peas
- 2 tablespoons olive oil
- 2 tablespoons fresh mint, chopped
- Juice of half a lemon
- Salt and black pepper to taste
Step-by-step preparation:
- Boil green peas for 3-4 minutes until soft.
- Drain and transfer the peas to a bowl of ice water to preserve their vibrant green color.
- In another bowl, combine olive oil, fresh mint and lemon juice.
- Transfer the drained peas to this bowl and mix well.
- Season with salt and black pepper. Serve hot or cold.
Potato soup with green peas
