Classic goose pate
Try the goose meat pate. It will turn out moderately fatty, so it will be ideal for spreading on bread.
Ingredients:
- 500 g goose fillet
- 100 g pork fat
- 1 onion, minced
- 2 garlic cloves, minced
- 50 ml cognac
- 2 eggs
- 100 ml cream
- Salt and pepper to taste
- A pinch of nutmeg
- 2 tablespoons of oil for frying
Step by step preparation:
- Heat a skillet over medium heat and add oil. Fry the onion and garlic until golden brown.
- Add the goose fillet and lard to the skillet. Fry them until golden brown.
- Add cognac and set it on fire to evaporate the alcohol. Remember to be safe and careful when working with fire.
- Transfer the mixture from the skillet to a food processor or blender. Add eggs, cream, salt, pepper and nutmeg. Mix until a smooth mass is obtained.
- Pour the mixture into a baking dish and bake in a preheated oven at 180 degrees Celsius for 45-60 minutes, or until the pâté is golden on top.
- Leave the pâté to cool before serving. Serve with toast or fresh bread.
Vegetarian mushroom pate
Pate can be prepared from a variety of ingredients. And it doesn’t have to be meat. We offer delicious vegetarian meals.
Ingredients:
- 500 g fresh mushrooms (champignons, chanterelles or other mushrooms of your choice)
- 1 onion, minced
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 50 g nuts (walnuts, almonds or other of your choice)
- 2 eggs
- 50 ml cream or vegetable cream cheese
- Salt and pepper to taste
- Fresh herbs for garnish
Step by step preparation:
- Prepare the mushrooms by removing the dirt and cut them into thin slices.
- Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until translucent.
- Add the mushrooms to the pan and sauté them until soft and golden brown.
- In a food processor or blender, grind the nuts until crumbly.
- Add the sauteed mushrooms, eggs, cream or vegetable cream cheese, salt and pepper to the nut processor. Mix until a smooth mass is obtained.
- Pour the mixture into a baking dish and bake in a preheated oven at 180 degrees Celsius for 30-40 minutes, or until the pâté is golden on top.
- Serve the pâté garnished with fresh herbs on toast or fresh bread.
Red salmon pate
An excellent option for a dinner table would be a fish pate. It is very easy to prepare it.
Ingredients:
- 200 g smoked salmon
- 100 g cream cheese
- 2 tablespoons cream
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh dill
- 1 tablespoon minced red onion
- Salt and pepper to taste
Step by step preparation:
- Grind the smoked salmon in a food processor or blender.
- In a large bowl, combine smoked salmon, cream cheese, cream, lemon juice, dill and red onion.
- Season with salt and pepper to taste. Stir so that all ingredients are well combined.
- Transfer the mixture to a baking dish or small molds.
- Chill in the refrigerator for several hours or until the pâté is set.
- Serve the pâté with toast or crackers.
