Ingredients:
- Red fish (salmon, trout or any other) – 400 g
- Broccoli – 300 g
- Potatoes – 2-3 pcs.
- Onion – 1 pc.
- Carrots – 1 pc.
- Celery – 1-2 stalks
- Garlic – 2 cloves
- Cream (20-30%) – 200 ml
- Fish broth or water – 1 liter
- Butter – 50 g
- Olive oil – 2 tbsp. l.
- Salt, pepper – to taste
- Bay leaf – 2 pcs.
- Greens (parsley, dill) – for serving
Step-by-step preparation of chowder soup with red fish and broccoli
- Peel the red fish from skin and bones, cut into medium-sized cubes. Divide the broccoli into small florets.
- Peel the potatoes and cut into cubes. Finely chop the onion, carrots and celery. Chop the garlic.
- In a large saucepan, heat the olive oil and butter. Add onion and fry until translucent. Then add carrots and celery and fry for another 5 minutes. Finally, add the garlic and fry for 1 minute.
- Add potatoes to the pan with fried vegetables and fill everything with fish broth or water. Bring to the boil, then reduce heat and simmer for 10-15 minutes until the potatoes are tender.
- Add red fish cubes and broccoli florets to the pan. Cook for another 5-7 minutes until the fish is cooked through.
- Pour cream into the soup, add bay leaf, salt and pepper to taste. Bring to a boil, then immediately reduce heat and let simmer, covered, for 5-10 minutes.
Serve the chowder hot, sprinkled with finely chopped herbs on top. If desired, you can add a piece of butter for a richer taste.
