Ingredients for preparing two servings:

  • 2 eggs
  • 200 g thick natural yogurt (preferably Greek)
  • 1 clove of garlic
  • 30 g butter
  • 1 tsp ground red pepper (paprika)
  • 1 tsp ground chili (optional)
  • Vinegar for boiling eggs
  • Salt to taste
  • Greens for decoration (dill, parsley)

Step-by-step preparation:

  • First, prepare the base for the dish – garlic yogurt. Peel and crush the garlic clove. Add the garlic to the yoghurt, add a little salt and mix well. For a richer and more aromatic yoghurt, leave it to sit for 5-10 minutes.
  • To make poached eggs, bring a small pan of water to the boil and add 1-2 tablespoons of vinegar – this will help the whites to set faster. Reduce the heat slightly so that the water does not boil too much and carefully crack the egg into a small cup. Create a slight swirl in the water with a spoon so that the whites swirl around the yolk and carefully lower the egg into the water. Cook for about 3 minutes, until the whites are completely set and the yolk is still soft inside. Repeat with the other egg.
  • Melt the butter in a small frying pan. Add paprika and ground chili (if you want to add a spicier taste). Cook over medium heat until the butter turns a beautiful golden-red hue and begins to emit the aroma of spices. Place a layer of garlic yogurt on a plate. Carefully place the poached eggs on top. Drizzle with herb butter. Garnish with finely chopped herbs to taste.
